Tuscan Salami with Chianti wine . Mignon  handwrapped 200g

Salami Chianti has long cylindrical shape, red, strong flavor and intense aroma.

Salami Chianti is obtained from pork. Once the slaughter, we proceed to the selection and crushing of the meat, which is then mixed with salt, pepper, garlic, red wine and natural flavors (including cloves, nutmeg, cinnamon, corn, garlic and coriander) . After bagging, you proceed manually to the binding or to packaging through the use of network hemp (unfortunately not readily available). Following is the final stage of maturation.

The product owes its traditional character as well as the origin exclusively regional pigmeat used and combined with other ingredients, the transformation technique was almost unchanged compared to the original. Over time manufacturers have honed their skills in the process, especially with regard to the stages, manual, fastening or packaging with networks of hemp. The product is distinguished by its particular taste.

In salami they became exclusively pork from farms in the province of Siena and Arezzo. It is not transformed or foreign meat or frozen meat. In 2004 it was certified by Certiquality the production of sausages chain obtained elusively with fresh meat stemming from pigs born, alevati, transformed into Tuscany. The process is still tied to the Tuscan tradition (for example tying sausages is still done by hand) combined with modern equipment and performed in local heaters and air-conditioned such as to ensure compliance with the health standards required by EU directives and especially the constancy and the continuity of the finished product.
